This is an awesome way to turn one package of steaks into a meal for 8 people. We always begin with fresh, chemical free salad greens purchased at the farmers market.
Ingredients:
- 12 ounces beef steak, cut into thin strips
- 2 tsp dry fajita seasoning (salt, chili powder, paprika, cumin)
- 1 sliced red, orange, or green pepper
- 1 sliced onion
- 1 can black beans – drained
- 1 tomato – chopped
- ½ c sliced black olives
- cheese
- lettuce
Directions:
- Sprinkle steak with fajita seasoning and let set for 2-4 hours before grilling if possible for best flavor. Grill to medium rare and slice into thin strips.
- In skillet, saute peppers and onions in coconut oil until vegetables are tender.
- Makes 4 large salads.
Southwest Fiesta Dressing:
- ½ c plain yogurt
- ¼ c sour cream
- 2 tbsp ketchup
- 2 tbsp minced onion
- 1 tbsp lemon juice
- 1 tsp cumin
- ½ tsp chili powder
- 1 garlic clove – minced
- ¼ tsp salt
Mix all ingredients together and chill. Best if made an hour or more ahead of time.
