Lots of folks have been enjoying our pork, and we enjoy providing all of you with safe, local, authentic food for your tables.  If you have been purchasing pork by the cut at the local markets, take a moment consider the benefits of ordering a side of pork for your freezer.

Buying in bulk is a great way to save and have our delicious pork available all the time!  You can enjoy bacon, pork chops, tenderloin, ham, ribs and roast all for about the per pound price of our ground sausage.  That’s right – $5.50/lb for all of your favorites.

Our system begins with certified organic weaned piglets that have never been given any antibiotics, vaccinations, medications or growth stimulants.  These hogs are then raised on our chemical free lush pastures where they will obtain at least 25% of their diet from grazing and foraging.  The balance of their diet is chemical free and GMO free transitional organic grains (no genetically modified grains here!).  The pigs are handled humanely and get to act like a real hog, outdoors in the sunshine, fresh air and dirt (they really, really love the dirt part).

Here are some details about how the whole thing works and how to order:

Pastured Pork Details:

  • Hogs are offered by the half or whole
  • They are sold by live weight ($2.80/lb for a whole or $2.95/lb for a half)
  • Processing costs are additional and paid direct by you to the butcher
  • Butchering fees include custom cutting & packaging to your specifications
  • Complete line of msg free seasonings available
  • All cured meats are 100% nitrate and msg free

Half Hog

  • Approximately 70-75 pounds of meat
  • Total estimated cost of $5.90/lb ($420 approximate total)
  • Retail value is approximately $600
  • This includes basic butchering costs but does not include smoking, curing, linking, patties, etc
  • $125 non-refundable deposit required
  • Price includes our hauling the animal to the butcher and educating you on the cut choices available to you.  We also take the time to walk you thru the cut process as required at no additional fee.
  • Quantities and price per pound listed above are estimates only.  Each animal is unique and every order differs, altering the final outcome.

Whole Hog

  • Approximately 140-150 pounds of meat
  • Total estimated cost of $5.50/lb ($795 approximate total)
  • Retail value is approximately $1200
  • This includes basic butchering costs but does not include curing, smoking, linking, patties, etc
  • $175 non-refundable deposit required
  • Price includes our hauling the animal to the butcher and educating you on the cut choices available to you.  We also take the time to walk you thru the cut process as required at no additional fee.

Please note that these are estimates with basic butchering fees included.  All estimates are based on a 250lb hog, and weights will vary. We do have a limited number of sides available, so please don’t wait too long to order!  Hogs will be delivered to the butcher in November and typically take approximately eight business days to get back.  Prices do not include our picking up your order from the butcher (additional fee).

What’s Included?

Every animal is unique, and they will never produce the exact same amount of each cut of meat.  However, a typical half hog will give us the following quantities of each cut:

  • 10-12lbs bacon (happiness is a bacon sandwich)
  • 12-15lbs of loin (this includes center loin chops, tenderloin and sirloin)
  • 10-12lbs sausage (additional sausage can be obtained by grinding ham or shoulder)
  • 18-20lbs ham (can be made into smoked ham steaks, whole hams or uncured pork cutlets)
  • 15-18lbs shoulder roast (can be made into large roasts, pork steaks or some of each)
  • 5-6lbs spare ribs
  • 2-3lbs of baby back ribs
  • 2-3lbs of ham hocks (great to have smoked for green beans, navy beans, soups, etc.)
  • 3-5lbs of soup bones (these are also great for dog treats!)

For a whole hog, simply double the above quantities.

About our pork…..

Pastured hogs have been a wonderful addition to our farm.  They are a highly intelligent animal, each having their own distinct personality and are a real joy to be around.  We’re convinced that happy hogs make for healthier, better tasting meat and the stress-free environment we provide them creates just that.  They get to live outdoors, root in the dirt, run and play, sleep beneath the shade of a tree and simply enjoy being a hog.

We begin by purchasing heritage breed, certified organic wiener piglets from another farm located right here in Central Indiana.  We then rotate them to fresh pasture paddocks using portable electric fencing and once they have foraged thru an area we move them again.  Hogs actually graze very well and are true omnivores, collecting about 25% of their diet from the pasture itself.  This grazing attribute contributes to the wonderful flavor and lean qualities of the meat.  The balance of their diet is a GMO free and chemical free corn and soybeans mixed with certified organic minerals and supplements.  And per our standard, we never administer to them any antibiotics or vaccinations.

Hogs are also excellent “tractors” with a built in “plow” and require no gasoline, oil or expensive repairs, making them a very sustainable and an integral mix to our farming operation.  Our pigs are currently being used to clean up old, abandoned pasture areas that are overgrown with brush, briars and weeds.  They will eat the grasses, dig for roots and tubers, all while tilling up and mineralizing the soil as they go.  This allows the native grasses to naturally reestablish themselves without any input from us.  All of this work in conjunction with the fertilization the chickens provide is preparing the way for our grass-fed beef herd that we will start in 2010.

This effort creates a super lean, excellent tasting meat that is vastly superior to hogs raised in confinement and sold at the supermarket.  We offer our customers the opportunity to purchase by the half or whole sides by pre-order.  We also now offer 16 options of pork by the cut.
